Betty Crocker cake mix without eggs

If you’ve ever wondered if there’s a way to make Betty Crocker cake mix without eggs, then wonder no more. The answer is yes! In fact, there is a very easy hack to make Betty Crocker cake mix completely vegan. Read on to find out how!

Ingredients
  

  • 1 Betty Crocker 425g cake mix
  • 300 ml fizzy drink (see recipe notes)

Instructions
 

  • Preheat the oven to 180°C / 160°C fan.
  • Grease and line 2 x 20cm cake tins.
  • Beat the fizzy drink and cake mix together for 1 to 2 minutes, until thick and creamy.
  • Pour evenly into the two cake tins, and get them straight into the oven.
  • Bake for around 25 to 30 minutes, until a skewer in the centre of the cake comes out clean.

Notes

  • If you or your child has an allergy, always double check that the recipe and all of the components are suitable. This includes checking 'may contain' statements on each ingredient and making your own assessment of risk based on personal circumstances.
  • Many different types of fizzy drink will work with this method. For a chocolate or red velvet cake, Coke & Pepsi are most commonly recommended. For vanilla or lemon cakes, Lemonade and Sprite both work well.
  • If you want a healthier option, carbonated water will also work (but the rise is not so good).
  • Whichever flavour you choose, you will need 300ml, slightly less than a standard 330ml size can.
