Course Light lunch, Main Course
Servings 4 people (2 adult & 2 child size portions)
- 275 g dried pasta of your choice
- 1/2 ripe avocado
- 80 g vegan cream cheese
- 1/2 tbsp nutritional yeast
- A few drops lemon juice
Get your pasta on to boil; cook according to the packet instructions.
Whilst the pasta is cooking, prepare your sauce.
Firstly, scoop the flesh of half an avocado into a mixing bowl. Mash it well with a fork.
Then add the nutritional yeast, vegan cream cheese, and lemon juice.
Blend all the ingredients together until smooth; I find a stick bender easiest for this.
Drain the pasta, then add back to the pan and stir through the sauce immediately, allowing it to warm in the pan.
Add a few more drops of lemon juice to taste. For the grown ups, season with salt and pepper.
- If you or your child has an allergy, always double check that the recipe and all of the components are suitable. This includes checking 'may contain' statements on each ingredient and making your own assessment of risk based on personal circumstances.
-
All the ingredients in this recipe are nut-free, but you do need to choose a vegan cream cheese which doesn’t contain nuts. Violife make a tasty nut free cream cheese.
- To make the avocado pasta gluten free, choose gluten free pasta. Orgran and Doves Farm both do a good selection using ingredients such as buckwheat, corn and rice. You will also need to ensure that you use a vegan cream cheese which is gluten free, such as Nush or Violife.
